Principle of operation
An energy-saving UVC lamp emits germicidal ultraviolet rays, transforming oxygen into ozone, thus destroying bacteria by oxidation. The effect of 254 nm UV radiation is no longer to be demonstrated. It is completely bactericidal, virucidal, germicidal, etc.
The ozone-generating cabinets thus ensure excellent decontamination of the utensils placed on the basket support. These cabinets, which comply with hygiene standards, are used in all sectors of industry and food businesses. Built in stainless steel, they are designed to last and to be installed in potentially humid environments.
Use
After having cleaned the knives, place them on the basket support or on the magnetic bar and activate the adjustable timer from 0 to 2 hours (recommended duration: 1h30). At the end of this time, the knives are sterilized and ready to be used again.
